Bay Scallops are bi-valve mollusks. The part eaten is the abductor muscle; this is the cylindrical white meat that holds the two shells together. Bay Scallops are an important high-quality product and widely considered the best flavored of all scallops. Fresh Bay Scallops require very little cooking time and, in fact, are eaten raw as a sushi item.
